Grease a 9x13 inch baking dish.
Spread half of the cooked and crumbled beef sausage evenly across the bottom.
Add half of the cubed bread on top of the sausage.
Sprinkle half of the shredded cheese over the bread.
Spread half of the vegetables (if using) on next.
Repeat the layers: sausage, bread, cheese, and veggies (if using).
In a large bowl, whisk together the eggs, milk (or cream), and any spices.
Pour this mixture evenly over the layered ingredients.
Bake in a preheated oven at 350°F (175°C) for 45-60 minutes, or until golden brown and set.
To check if it's done, insert a knife into the center. If it comes out clean, it's ready. If not, bake for another 10-15 minutes.
Let the casserole cool for a few minutes before cutting and serving.
